1-1/3 c. dry beans
1/2 medium yellow onion, chopped
3 stalks of celery, chopped
1 - 16 oz. can tomatoes
1 clove garlic, minced
salt and pepper to taste
OTHER POSSIBILITIES
2 carrots/mushrooms/peppers
juice of 1/2 lemon
1/4 c. red wine or Sherry

Wash beans and peas, place in large container, cover with
water, add 1 T salt and soak overnight. In morning drain; add 1-
1/2 qts. water and 1/4 lb. ham or hamhocks (fresh or pre-
cooked). Add spices from bag and simmer covered for 2-1/2 - 3
hours.
