Fiesta Chicken Recipe

6 chicken breast halves

4 T. lime juice
1/4 c. olive oil
2 T. chili powder
1/2 tsp. pepper
1 tsp. salt

Salsa topping:
3 med. red tomatoes, seeded and chopped
1/4 c. finely chopped red onion
1 T. fresh lime juice
1 large clove of garlic, minced
1/2 tsp. salt
1/4 tsp. cumin
2 tsp. chopped and seeded jalepeno pepper
2 T. cilantro

Mix together marinade and marinate chicken in the refrigerator for at least an hour. Mix salsa ingredients together. Grill chicken and top with salsa. Serve with Baked Mexican Rice and Black Beans with Cilantro (see recipes in Side Dishes section).
