1 can (14 1/2 oz) evaporated milk
1 3 oz pkg lemon jello
3/4 cup sugar
1 1/2 cup boiling water
3 T lemon juice (1 lemon)
1 T lemon rind

35 oreo cookies
1/2 cup melted maragine

Directions:
Directions:
Chill evaporated milk overnight in refrigerator. Dissolve the jello & sugar in the hot water. Chill until almost completely set. Stir in the jello the lemon juice & rind. Whip the milk until it resembles soft whipped cream. Add the jello & whip about 2 min. Crush the oreo cookies in a plastic bag. Add melted margarine & press in bottom of 9"x13" pan. Save few crumbs. Pour the whipped lemon mixture over the cookie crust. Sprinkle the remaining chocolate crumbs over top. Refrigerated until serving time.

Easy on calories. Take to a potluck only in cold weather. If allowed to set out on hot day it will evaporate or get runny.
