2-3 Chicken Breasts
1 can black beans
1 cup cooked rice
1/2 c frozen corn
2 c cheddar and Monterey jack cheese
2 c mild salsa
1 tsp salt
pinch black pepper
1/2 c chopped green onion

combine chicken, beans, rice, and corn. Stir 1 c cheese 1 c salsa, chilies powder, salt and pepper.
mix well.
in a 9x13 dish
place in tortillas filled with mixture in baking dish. Add 1 cup salsa down center cover with foil bake 20 minutes at 375 .
Remove from oven sprinkle 1 cup cheese bake uncovered 475 until heated sprinkle green onion and garnish with sour cream.

I also like to pour a can of green chili enchilada sauce on them before I cook them.
