¼ cup chopped green pepper
¼ cup chopped onion
3 egg whites
1 small red potato, cooked and sliced
2 tbsp. reduced-fat shredded cheddar cheese
1 strip reduced-fat turkey bacon, cooked and crumbled

Directions:
Directions:
1.) Lightly spray a nonstick 8” frying pan with cooking spray and sauté peppers and onions over medium heat until soft. Put the vegetables into a separate bowl.

2.) Whisk the egg whites and pour into the heated frying pan. Once the eggs have set, in approximately 40 seconds, start lifting the edges of the omelet and let the uncooked egg on top run underneath.

3.) Before the top is completely set, lay the sliced potatoes across one half of the omelet, top with the reserved pepper and onion mixture, and sprinkle with cheese and crumbled bacon. Flip the untopped side of the omelet on top of the potatoes. Gently slide omelet from pan onto plate to serve.
