1 cup quick cooking oats
1 ¼ cups boiling water
1 stick margarine
1 cup brown sugar
1 cup white sugar
2 eggs
1 ½ cups flour
½ teaspoon (or a little less) salt
1 teaspoon soda
1 teaspoon cinnamon
¼ teaspoon nutmeg

Directions:
Directions:
Pour water over oats and let stand. Cream together margarine and sugars, add eggs and stir well.
Add the dry ingredients and mix thoroughly. Stir in the cooked oats. Pour into greased and floured 13x9 pan. Bake 30 minutes at 350º.

Frosting:
Melt 5 tablespoons shortening and ½ heaping cup cocoa in saucepan on stove top. Add 7 tablespoons scalded milk, 3 cups powdered sugar, and 2 teaspoons vanilla to mixture.
Remove from heat and place in shallow sink of cold water. Mix with hand beaters until thick.

Jeff and I usually celebrated our birthdays together, and this was both of our favorites. We always chose this cake for our birthday cake each year, and still do today.
