3 eggs, well beaten
3 cups sugar
1 cup oil
3 cups flour
2 cups finely grated carrots
1 - 9 ounce can crushed pineapple, juice and all
1 teaspoon soda
1 teaspoon cinnamon
1 teaspoon salt
2 teaspoon vanilla

Directions:
Directions:
Mix eggs, sugar and oil in a large mixing bowl. Add flour and mix well. Add carrots, pineapple and mix until blended. Stir in soda, cinnamon, salt, and vanilla until thoroughly mixed. Pour into two greased and floured loaf pans.
