1 eye of round roast (any size)
salt and cracked pepper

Directions:
Directions:
On piece of foil, spread salt and cracked pepper (be generous).
Trim off fat and roll in salt and pepper mixture.
Bake in roasting pan at 500ºF for 20 minutes. Reduce temperature to 375ºF and cook 40 minutes more or until internal meat temperature reaches 160º.
Note: To serve, scrape off crust of salt and pepper, slice thin with electric knife. Do NOT serve juice from pan as gravy - too salty! Warn diners NOT to salt this meat!
