4 med. potatoes, julienned
3 carrots, julienned
1/3 c. chopped red onion
2 tbsp. butter or margarine
1/2 tsp salt, optional
1/8 tsp. pepper
1/2 c. shredded Pamesan or cheddar cheese

Directions:
Directions:
Divide potatoes, carrots & onion equally between four pieces of heavy aluminum foil (@ 18in. x 12 in)
Top w/ butter;sprinkle w/ salt if desired & pepper. Bring opposite ends of foil together over vegetable & crimp tightly. Grill, covered, over med. coals for 20-30 minutes or til potatoes are tender. Remove from grill. Open foil & sprinkle w/ cheese; reseal for 5 minutes or until cheese melts.
Yield: 4 servings
