4 skinless boneless chicken breasts
salt and pepper
Flour
3/4 stick of butter
2 T. diced red onion
1 T. chopped garlic
1 1/2 cup white wine
1 cup whipping cream
1 T. chopped parsley

Optional: Wild rice and/or 1-2 bags of spinach, mushrooms.

Sprinkle chicken with salt and pepper. Coat with flour. Melt 2T. butter in skillet. Add chicken and cook until browned. About 5-6 minutes each side. Remove to a plate and tent with foil to keep warm.

In same pan, melt 2 T. butter over medium heat. Saute onions and garlic, scrapping the bottom of the pan. When onions are almost tender, I add some sliced fresh mushrooms and saute for another minute or two. Add cream and wine. Boil and reduce by half (about 5-10 minutes). Add parsley, salt and pepper. Add chicken and juices. Toss to coat.

Before I cook the chicken, I start the rice. I use a box of Uncle Bens original recipe wild rice. Matt loves spinach so I melt a couple of T. butter in another skillet over medium heat. Saute the spinach until heated through. Season with salt and pepper.

This is my all time favorite thing to make. The wine sauce is SO GOOD! When I cook with wine, I tend to drink it too. Maybe this meal isn't that great sober, but, it sure tastes good drunk! :)

When I make this for company. I mix the rice with the chicken and sauce ahead of time and then keep it warm in the crock pot or oven.
