Directions:Sprinkle chicken with salt and pepper. Coat with flour. Melt 2T. butter in skillet. Add chicken and cook until browned. About 5-6 minutes each side. Remove to a plate and tent with foil to keep warm.
In same pan, melt 2 T. butter over medium heat. Saute onions and garlic, scrapping the bottom of the pan. When onions are almost tender, I add some sliced fresh mushrooms and saute for another minute or two. Add cream and wine. Boil and reduce by half (about 5-10 minutes). Add parsley, salt and pepper. Add chicken and juices. Toss to coat.
Before I cook the chicken, I start the rice. I use a box of Uncle Bens original recipe wild rice. Matt loves spinach so I melt a couple of T. butter in another skillet over medium heat. Saute the spinach until heated through. Season with salt and pepper. |

Notes: This is my all time favorite thing to make. The wine sauce is SO GOOD! When I cook with wine, I tend to drink it too. Maybe this meal isn't that great sober, but, it sure tastes good drunk! :)
When I make this for company. I mix the rice with the chicken and sauce ahead of time and then keep it warm in the crock pot or oven.
