1C (2sticks of butter
1t ground cinnamon
2 eggs
½ t salt
2C packed light brown sugar
3C quick cooking oats
2t vanilla extract
1- 1/3 cups (8oz package) toffee bits (found with chocolate chips at the store)
1 ¾ C all-purpose flour
1t baking soda
1C sweetened coconut flakes (optional)

Directions:
Directions:
Heat oven to 375 degrees F. Lightly grease cookie sheet. Beat butter, eggs, brown sugar and vanilla in a large bowl until well blended. Add flour, baking soda, cinnamon and salt; beat until blended. Stir in oats, toffee bits and coconut, if desired with a spoon. Drop dough by rounded teaspoons about 2 inches apart onto a prepared sheet. Bake 8-10 minutes or until edges are lightly browned. Cool 1 minute, move to wire rack and cool completely.
