3 c. bran cereal (All-Bran is best)
1 c. boiling water
1/2 c. canola oil
2 eggs
2 c. whole wheat flour
1/2 c. white flour
1/4 c. flax meal (optional)
1 1/2 c. sugar
2 1/2 t. baking soda
2 c. buttermilk
1 c. raisins, blueberries, currents, cranberries, or any berry you want

Directions:
Directions:
Preheat oven to 400 degrees. In large bowl combine cereal with boiling water. Stir in oil and eggs. Add remaining ingredients. Spoon into greased muffin cups, 3/4 full. I use a pan with 8 large muffin cups, that uses up about 1/2 the batter. You can refrigerate the rest of the batter for a week and bake up some more fresh muffins another morning. Bake 18-22 min.
