1 pkg. (16 oz.) uncooked mostaccioli or ziti
1 c. chopped onion
1 lb. ground beef
3 garlic cloves, pressed
2 tsp. Italian seasoning
1 jar (48 oz.) spaghetti sauce
1 can (14.5 oz.) diced tomatoes, undrained
1 egg
1 container (15 oz.) part-skim ricotta cheese
2 c. shredded mozzarella cheese, divided
1/4 c. fresh parsley
1/4 tsp. ground black pepper
1/2 c. grated fresh Parmesan cheese, divided

Directions:
Preheat oven to 350º. Cook pasta according to package directions; drain. Place onion, ground beef and garlic in large skillet and brown; drain. Sprinkle with seasoning, stir in spaghetti sauce and tomatoes. Mix together ricotta cheese, 1 c. of mozzarella cheese, parsley, and pepper and 1/4 c. Parmesan cheese. To assemble casserole, place cooked pasta in large baking dish. Add 6 cups of the meat sauce; mix well. Spread ricotta mixture evenly over pasta. Top with remaining meat sauce. Bake 1 hour. Top with remaining mozzarella and Parmesan cheeses. Continue baking 10 minutes or until bubbly. Garnish with additional parsley.
