1 c. sugar
4 Tbs. flour
3 Tbs. cocoa
2 cups milk
2 eggs
butter
1 tsp. vanilla
1 Tbs. sugar for meringue
For banana or coconut pie decrease sugar to 3/4 cup and omit cocoa.

Mix sugar, flour and cocoa.

Heat milk. Separate the eggs. (Reserve whites for top of pie.)

Using wire whisk, beat egg yolk into warm milk and then mix in dry ingredients slowly so they will not lump. Keep heating and whipping switching to a spoon when it starts to thicken.

Add a big hunk of butter to it and stir that in. Remove from burner and add vanilla. (If you use pure vanilla, you might cut it to 1/2 tsp.) When mixture is thick pour into cooked pie crust.

Beat the egg whites with a little sugar until they form peaks. Spoon onto top of pie. Brown in oven.
