1 cup sugar
1/2 cup shortening softened (I use butter)
2 eggs
2 bananas, very ripe and smashed
1 t vanilla
1/4 cup buttermilk or sour milk
1 cup whole wheat flour
1 cup all purpose flour
2 t baking soda
1/2 t salt
1 cup chopped nuts (optional)
1 cup chocolate chips (optional)

Directions:
Directions:
Preheat oven to 350ºF.
Grease a loaf pan.
Cream together shortening and sugar.
Add eggs, one at a time, until combined.
Add bananas, vanilla and buttermilk until combined.
In a seperate bowl, sift dry ingredients together.
Add dry ingredients into banana mixture.
Stir just to combine. Don't overmix.
Fold in nuts and chocolate chips if using.
Pour batter into prepared pan.Bake for 50-60 minutes.
Let cool in pan 5 minutes.
Remove to a wire rack to cool.
Enjoy!

*Sour milk can be made using regular milk and a splash of vinegar.
