2 c. milk
1c. sugar
4 eggs
1/2 c. all-purpose flour
6 T. butter or margarine
1 tsp. salt
1 c. coconut

In a (large) blender/food processor, combine milk, sugar, eggs, flour, butter, vanilla, & salt.
Cover & blend for 10 seconds; scrape the sides. Blend for another 10 seconds. Add coconut; blend for 2 seconds. Pour into a greased 10 inch pie plate. Bake at 350 F for 50 - 55 minutes or until knife inserted near center comes out clean.
Serve warm or cold.
Yield: 6 servings.
