3 cups flour
2 1/2 tsp. baking powder
1/3 cups sugar
l lemon (zest only)
3/4 cups butter
1 cup buttermilk (you can use plain yogurt)
1/4 cups raisins, dried cherries or cranberries (cut into pieces)

Directions:
Cut together the butter, sugar, baking powder, and lemon zest. The butter should be cut into the size of a pea or even a little larger. Add the buttermilk and dried fruit; handle the dough as little as possible. Turn dough on a floured surface and knead gently a few times. Press dough into a circle (about 1/2 or more inch high) and then cut into wedges. Place wedges on parchment paper lined baking sheet (or a well greased pan). Bake at 425 degrees for 15 minutes or a golden brown. When cooled, glaze with a powdered sugar and lemon juice & zest icing. (about 1 cup XXX sugar, 1 tbsp. lemon juice, and lemon zest)

It's really true....these are THE BEST LEMON SCONES IN THE WORLD. You will become wildly popular after you serve this quick bread. (more wildly popular, that is). The trick is to cut the butter into fairly large pieces - about the size of the end of your thumb.
