1/2 head romaine lettuce cut into bite-size pieces
2 large heads of endive, thinly sliced crosswise (about 3 cups)
3 cup fresh baby arugula
12 cherry tomatoes-halved
1/2 red onion-thinly sliced into rings
1/2 tsp salt
4 oz Gorgonzola cheese-coarsely crumbled
red wine vinaigrette (see recipe below)
1/4 tsp freshly ground black pepper
1 lb leftover steak (slightly warmed) cut crosswise into very thin slices.

Red Wine Vinaigrette:

1/2 cup red wine vinegar
3 Tbsp lemon juice
2 tsp honey
2 tsp salt plus more to taste
1 cup olive oil
fresh ground pepper to taste

1. In a large bowl, toss the lettuce, endive, arugula, tomatoes, and onion to combine.
2. Add half the cheese and toss the salad with enough vinaigrette to coat.
3. Season the salad with salt and pepper to taste.
4. Divide the salad among 4 plates and top with warm steak slices.
5. Drizzle more vinaigrette over the steak and sprinkle with remaining cheese.
6. Serve immediately.

Vinaigrette: Mix the vinegar, lemon juice, honey and 2 tsp salt in a blender. With the machine running - gradually blend in the oil. Season the vinaigrette with salt and pepper to taste!
