1 1/2 pound boiled, peeled and deveined shrimp
1 cup onions-chopped very fine
1 cup celery-chopped very fine
1 cup bell pepper-chopped very fine
8 Tablespoons real butter
1/2 cup Parmesan cheese
1/2 cup bread crumbs
2 teaspoons salt
1 teaspoon black pepper
1 teaspoon thyme
1 teaspoon Chinese red pepper
1 teaspoon oregano
2 eggs
1 box Manicotti - boiled and cooled (very aldenté)
32 oz Alfredo sauce
1 bunch green onions
1/4 cup parsley

Directions:
Directions:
1. Chop cooked shrimp and put in a large mixing bowl.
2. Melt butter in a large skillet and add veggies, cook on medium heat and stir until all veggies are translucent. Add all seasonings and pour into mixing bowl with cooked shrimp.
3. Add bread crumbs, cheese, two beaten eggs, chopped green onions, and parsley. Stir by hand or with a soft spatula until mixed well.
4. Take your cooled Manicotti and stuff the shells by hand and place in a lightly oiled baking dish.
5. Pour Alfredo sauce over the stuffed shells and cover the dish with foil.
6.. Bake at 300º for 35 minutes. Uncover and sprinkle with Parmesan cheese - serve piping hot!

Make sure not to overcook shells. They stuff easier if they are done a bit less than traditional aldenté! Very tasty!
