2 cup flour
1 1/2 teaspoon soda
2 teaspoons baking powder
1 teaspoon salt
2 teaspoons cinnamon
2 cups sugar
1 1/2 cups oil
4 eggs
2 cups grated carrots
1 can (8 3/4 oz.) crushed pineapple, drained (2/3 c)
1/2 cup chopped dates
1/2 cup nuts

Frosting:

6 oz. cream cheese
1 stick butter
1 teaspoon vanilla
2 cups powdered sugar
1/4 cup drained pineapple
1/2 cup nuts

Directions:
Directions:
1. Mix together flour, soda, baking powder, salt, and cinnamon.
2. Add sugar, oil, and eggs. Mix well.
3. Add carrots, pineapple, nuts, and dates. Blend together.
4. Line the bottom of a 9X13" pan with greased brown paper. Put batter in pan.
5. Bake at 350º for 45-60 min.

For frosting: blend cream cheese, butter, vanilla, and powdered sugar until smooth. Add pineapple and walnuts.
