1 pheasant
flour
salt
pepper
Crisco, oleo, or butter
Minute Rice brand long grain & wild rice (6 3/4 oz. pkg)
1 medium onion
1 cup chicken broth
1 cup milk

Directions:
Directions:
1. Brown 1 pheasant (cut up and dredged in flour, salt and pepper) in hot Crisco, oleo or butter.
2. Cook in 275º-300º oven for 1 1/2 hrs. or so.
3. Remove meat from bone when cool enough.
4. Cook long grain and wild rice according to directions.
5. While rice is cooking, melt 3 Tablespoons oleo in skillet and saute 1 medium onion. When tender, gradually add 2 Tablespoons flour.
6. Then add 1 cup chicken broth and 1 cup milk.
7. Mix sauce with rice and pheasant.
8. Put in casserole and bake in 350º oven for 30-50 min.
