1/2 cup margarine, softened
3/4 cup sugar
2 lg. eggs, separated
1 teaspoon lemon rind
1 teaspoon vanilla
1 1/3 cup flour
1 1/8 teaspoons baking powder
1/4 teaspoon salt
1/2 teaspoon soda
1/2 cup buttermilk
2 1/2 Tablespoons poppyseeds

Directions:
Directions:
1. Cream butter, add sugar, beat until fluffy.
2. Add egg yolks, one at a time, beating well after each addition.
3. Beat in lemon rind & vanilla.
4. Sift dry ingredients & add to butter mixture in batches alternately with buttermilk and blend until just combined.
5. Fold in poppyseeds.
6. Beat whites until peaks form.
7. Stir 1/4 of whites into batter, then fold in remainder gently, but firmly.
8. Bake 15 minutes at 350º.
