4 oz. uncooked whole wheat rigatoni pasta
2 tbsp. Cajun seasoning
1 bag baby spinach leaves
1 tomato, chopped
2 portions chicken breast (1/2 lb)
1/2 c. skim milk
1 tbsp. butter buds
8 oz. sliced fresh mushrooms

Directions:

Boil pasta, drain, set aside.

Lightly coat a large skillet with cooking spray and place over medium heat. Coat chicken breast with Cajun seasoning.

Place chicken in skillet, cook until no longer pink in the center (about 8 minutes on each side). Put chicken on plate and cover with foil to keep warm.

Add milk, cooked pasta, spinach, mushrooms and butter buds to skillet, mix well.

Cover and simmer over low heat, stirring occasionally, until heated through (about 5 minutes).

Divide pasta mixture into 2 portions and top with a portion of Cajun chicken. Garnish with tomatoes. Serve and Enjoy!
