Lemon Bars Recipe

2 sticks butter
1/2 c. granulated sugar
2 c. flour
1/8 tsp. salt
Filling:
6 extra lg. eggs at room temp.
3 c. granulated sugar
2 Tblsp. grated lemon zest
1 c. freshly squeezed lemon juice
1 c. flour

Directions:
Pre heat the oven to 350º. For the crust, cream the butter and sugar until light in bowl using the paddle attachment of your mixer. Combine the flour and salt and with the mixer on low, add to the butter until just mixed. Form dough in a flattened ball and press it into a 9x13x2 in. baking pan, building up 1/2 inch edges on all sides. Chill. (approx. 1/2 hour.) then bake the crust for 15-20 min. or until very lightly browned. Let cool on wire rack while you make the filling.
For the filling whisk (don't use mixer) together the eggs, sugar, lemon zest, lemon juice and flour. Pour over the crust and bake for 30-35 min. or until the filling is set. Cool to room temp cut and dust with powdered sugar. For the bigger pan of bars, double the recipe for the crust and put in a 13x18 half sheet pan. You end up with a little filling left over, (don't double the filling) because the sheet pan sides aren't 2 in. deep. It is extremely important to follow the recipe exactly, be sure to use extra large eggs, don't be tempted to use oleo instead of butter and DO NOT USE BOTTLED LEMON JUICE. The filling really needs the fresh lemon juice and the lemon zest.
