1 lb bay scallops or shrimp
kosher salt and pepper
5 tbs olive oil
3 tbs finely chopped shallots
1 can diced tomatoes
2 tsp white wine vinegar
1 1/2 tsp finely chopped parsley

Directions:
Directions:
Sprinkle scallops with salt and pepper. In a small saucepan combine 3 tbs of oil, shallots, tomatoes and vinegar. Let simmer for 2 minutes. Heat the remaining 2 tbs of oil in a skillet and add scallops in one layer. Cook shaking the sillet and stirring about 1 to 2 minutes until the scallops are heated through and do not look raw. Do not brown or overcook. Poor tomatoes sauce over all and heat through. Serve over linguini.
