3-4 jars (14 oz.) artichoke hearts
8 oz. low fat mayonnaise
1/2 c. parmesan, freshly grated
1/2 c. monterey jack cheese
1 pkg frozen chopped spinach
garlic powder
salt
pepper

thaw spinach and squeeze out all moisture / cut artichoke hearts into pieces after draining / combine spinach, mayo and cheeses / add garlic powder, salt and pepper to taste / mix well / gently add artichokes and mix / bake for 30 min. @ 400º

Serve with strong tortilla chips or pita chips.

Be sure to squeeze all of the moisture from the spinach. I usually line a colander with paper towels and add the spinach. Keep adding/changing paper towels until most of the moisture is gone, otherwise the dip is too runny. Also, I add more cheese than this. I probably use 8 oz. of monterey jack. And another thing... This is probably only one of two recipes where I use garlic powder instead of fresh garlic, but I find it blends much better without overpowering the dip.
