3 to 4 lbs chicken (I use thighs or breasts)
1 head garlic, finely chopped
1/4 tsp. dried oregano
salt and pepper
1/2 c. red wine vinegar
1/2 c. olive oil
1 c. pitted prunes
1/2 c. pitted green olives
1/2 c. capers with some juice
6 bay leaves
1 c. brown sugar
1 c. white wine
1/4 c. dried parsley

Directions:
Directions:
Combine all the ingredients and marinate the chicken overnight. Bake in the marinade. This dish is better the next day and at room temperature or just slightly warmed.
