12 egg whites, room temp
3/4 tsp cream of tartar
1/16- 1/8 tsp salt
3 c sugar
1/8-1/4 tsp vanilla
Whipped cream or cool whip (lg size)
Fresh strawberries, sliced (reserve some whole to decorate top of torte)
You will need a lg serving dish with a 1" edge

1. Line 2 cookie sheets with waxed paper and mark an 8" circle in each, then grease waxed paper with veg shortening. Pre-heat oven to 250 .
2. Add salt to egg whites and whip until foamy and add cream of tartar.
3. Beat very well, until stiff peaks form.
4. Slowly fold in sugar and add vanilla.
5. Heap egg white mixture evenly into each circle. With spatula smooth to edge of circle and form a depression in the middle of each. Sides will help hold in fruit during assembly.
6. Bake at 250º for 1hr 10min. Turn off oven and leave in oven over night. Do not open oven door. May also bake in am and leave in oven during the day.
7. Mix strawberries with sugar (reserve some berries) and mix well. Set aside in fridge to macerate, stirring occasionally.
8.Carefully lift one layer at a time and carefully remove waxed paper. Put first layer in serving dish and cover with 1/2 of strawberries 1/2 of whipped cream. Carefully lay second layer on top and repeat strawberries and cream.
9. Slice remaining berries and decorate top.
