4 fresh flounders, 2 garlic cloves-minced, oil for frying(EVOOextra virgin olive oil), 1 cup of plum tomatoes-chopped into small pieces, salt & pepper.

Directions:
Directions:
In a frying pan put EVOO -enough to cover the bottom of the pan, add garlic and fry on med low until soft and slightly brown, add flounder to the pan, add salt & pepper to taste, add tomatoes and cover. Let simmer for 20 minutes. (add ladle of hot water to frying pan to stretch oil) Serve with Linguine or spagetti.

My family loves pasta and loves fish. We also like heat to this dish, I add 2 hot to med hot peppers to the fying pan for a great taste.
