1 lb almond paste (not marzipan), 2 cups granulated sugar, 4 egg whites-slightly beaten, 3 oz pignoli nut(pine nuts)

Cut almond paste into small pieces & beat with electric mixer, about 1 minute. With mixer on low slowly add sugar & mix well. Add egg whites & beat till smooth. Stack 2 cookie sheets on top of each other or use 2 sheets parchment paper. Use pastry bag or a teaspoon, put on cookie sheet about 2 inches apart. Put nuts about 10 or 12 on each cookie. Bake 350º about 20 minutes or light brown. When cookies are almost cool remove from parchment paper with pancake flipper dipped in hot water.

If cookies stick, place a towel wrung out in hot water and lay flat on counter, place parchment paper on hot towel and wait a few minutes, moisture will loosen cookies so you can remove them.
