2 C enriched flour
4 tsp baking powder
1 tbsp sugar
1/2 tsp salt
1/3 C shortening
1 well beaten egg
1/2 C milk

Directions:
Directions:
Sift flour, baking powder, sugar and salt; cut in shortening until mixture is like coarse cumbs. Combine egg and milk; add to sifted dry ingredients, stirring just until moistened. Turn out on slightly floured surface. Divide dough in half; pat out to fit 8" x 1 1/2" round pans. For individual shortcakes, pat dough 1/2" thick and cut with 2 1/2" floured biscuit cutter. Bake in very hot oven (450ºF) 15-18 min. Spread any filling between layers and over top. Serve hot with plain or whipped cream.
