1/2 cup vinegar
8 slices bacon, cut up fine
1/2 cup water
3/4 cup sugar
1 egg, beaten
1 tsp salt
1/2 tsp black pepper
1 lb of fresh spinach
1 onion, thinly sliced
2 eggs, hard-boiled & chopped

Directions:
Directions:
In a large salad bowl, mix onions and spinach. In a deep dish, beat egg, add the sugar, salt, and pepper. Fry the bacon until crisp. Remove bacon, crumble and set aside. Stir in the water and vinegar. When warm, add the egg mixture. Keep stirring, while you bring it to a boil. Boil for a few minutes. Pour the hot dressing over the spinach and onions, and serve immediately. Garnish with crumbled bacon and finely chopped hard-boiled egg.
