3 lb. Pork cubes
3 Tbsp Olive oil
3 cloves garlic, chopped
1 1/2 cups diced onion
9 cups tomatoes, peeled & diced
3/4 cup white wine
1 1/2 cups beef broth
18 mushrooms, sliced
18 small peeled onions
1/2 cup chopped fresh parsley

Directions:
Directions:
Brown pork in olive oil. Remove, set aside to keep warm. Saute garlic and onions. Return pork to pan, and add wine, beef broth and tomatoes. Bring to a boil, then reduce heat and simmer, covered, for 45 minutes. Add onions, mushrooms, and parsley. Simmer, uncovered, for 15 minutes.
Serve over cooked noodles.
