3 sticks celery, diced
1 red pepper, diced
6 spring onions, chopped
1 medium cucumber, peeled and diced
3 tomatoes, diced
1 yellow pepper, diced
6 spears asparagus
1/5 cup sliced carrots

To be mixed into a peanut dressing
4 tablespoons crushed peanuts
2 tablespoons chopped coriander
1 clove garlic, crushed
juice of 3 lemons
2 tablespoons sugar
1 tablespoon sesame seeds
salt to taste

Place the vegetables in a salad bowl and pour the dressing over.
