1 avocado pitted, peeled and sliced
1/2 red onion peeled and sliced
1/2 cucumber peeled and sliced
6 tablespoons olive oil
2 tablespoons cider vinegar
1 teaspoon dry mustard
1 teaspoon salt
1/8 teaspoon ground black pepper

Directions:

Combine avocado, red onion and cucumber in a salad serving bowl; refrigerate until ready to serve.

In a small mixing bowl, combine olive oil, vinegar, mustard, salt and pepper; whisk together. Drizzle over salad just before serving.
