4 large baking potatoes
1 cup broccoli chopped
1 cup mushrooms sliced
1 T. olive oil
fresh chives
8oz cottage cheese
3 T. milk
salt and pepper

Directions:
Directions:
Bake potatoes until soft. Cut tops off and let cool 10 min. In frying pan saute broccoli and mushrooms in olive oil until soft. Scoop out potatoes leaving shell. Mash potatoes with cottage cheese, milk, salt, and pepper. Add the 2 mixtures together and chives to taste. Fill potato shells. Bake 30 min @ 350º.
