1¼ cups sugar
1/3 cup flour
Pinch of salt
1 teaspoon butter
Juice of 1 lemon
Rind of 1 lemon
3 egg yolks
1 cup boiling water

Meringue
3 egg whites
½ cup powdered sugar
1 teaspoon lemon juice

Directions:
Directions:
Mix sugar, flour and salt. Add boiling water, stirring constantly. Cook until thick. Add butter, lemon juice, rind and egg yolks. Mix well over heat until it returns to a boil.Turn into pie crust which has been cooked golden brown. Make meringue of egg whites, sugar and lemon juice. Bake in moderate oven until meringue is browned.
