2 C fresh rhubarb, cut into chunks
1 C sugar
2 tbsp flour
3 eggs, beaten
1 tsp vanilla
3 tsp sugar
1/4 C milk or coffee rich

Directions:
Directions:
Pour 1 C sugar and flour on rhubarb until sugar dissolves- about 10 min. Mix together eggs, vanilla and 3 tsp sugar. Add milk or coffee rich to egg mixture. Pour rhubarb mixture into piecrust. Then pour egg mixture over rhubarb. Put in oven and bake at 350ºF for 50-55 min until custard sets.
