2 whole chicken breasts, boned, skinned, & halved
3 Tbsp Italian breadcrumbs
2 Tbsp extra virgin olive oil
2/3 cup DRY Marsala wine
1 pkg frozen peas, thawed

Directions:
Directions:
Lightly coat chicken with breadcrumbs. In a large skillet, heat olive oil. Brown chicken on both sides. Pour Marsala over chicken. Simmer covered for 5 minutes. Turn chicken, and add peas. Simmer, covered, until peas are hot and chicken is done.(about 5 more minutes)

Mom was adamant about using only Dry Marsala in this dish. She felt that the Sweet Marsala was exactly that; sweet.
