16 asparagus spears
4 slices mozzarella
1 tsp basil
16 julienne strips red bell pepper
1 tsp lemon pepper
1# round steak ¼ “ thick
1 clove garlic, minced
salt & pepper
1/2 cup red wine
1 cup beef broth

Directions:
Directions:
Cut steak into 4 equal pieces. Place 1 slice cheese, 4 asparagus spears and 4 strips red pepper on top of each piece. Roll up jelly roll style, and secure with two pieces of butcher twine on each. In a large skillet, heat 2 Tbsp olive oil. Brown roll-up, then add wine, scraping up brown bits on bottom of pan.
Reduce about 3 minutes, then add beef broth. Lower heat to low, cover and simmer, for 30-40 minutes, until beef is fork tender.
