2 Tbsp thyme
3 cloves garlic, chopped
1/2 cup olive oil
1 red bell pepper, julienne
1 bay leaf hot pepper flakes to taste
1# ground lamb
2/3 cup red wine
1# plum tomatoes, diced
Romano cheese.

Saute spices in oil, 3 to 4 min. Add bell pepper, hot pepper, and bay leaf. Cook 10 to 15 min. Add lamb and brown thoroughly. Add wine, and then tomatoes. Simmer 20-25 min. Remove the bay leaf Serve over linguine..
Sprinkle with cheese

Mom liked to start this early in the day, and stop after adding the tomatoes. She would let it sit, off heat, so that the flavors would blend. When it was time to eat, she would bring it back to heat and serve hot.
