Sweet & Sour Chicken Recipe

6 boneless chicken breasts
1/3 c oil
1/2 c flour
salt & pepper
1 c sugar
2 T cornstarch
1/4 tsp ginger
1 T soy sauce
1 chicken boullion cube
3/4 c vinegar
1 can pineapple tidbits or chunks
1 green pepper, cut in strips

Heat oven to 350
Coat chicken in flour, salt and pepper and brown in oil
Place in greased casserole dish.
Drain and save pineapple juice.
Add water to juice to make 11/4 cups.
In saucepan, combine sugar, juice, cornstarch, vinegar, ginger soy sauce and boullion. Bring to boil x 2 minutes.
Pour over chicken and bake 30 minutes. Add green pepper strips and pineapple and bake another 30 minutes. Serve over rice.
