1 C sugar
1 heaping tbsp cornstarch
2 C boiling water
2 egg yolks, beaten
2 tbsp lemon juice or to your taste
2 egg whites
1 tbsp water
dash of salt
4 tbsp sugar

Directions:
Directions:
Cook sugar, cornstarch and water until thickened, stirring constantly. Add small amount of hot mixture to egg yolks. Stir into hot mixture - cook 1 min more. Add lemon juice. Cool and pour into pie shell. Cover with meringue sealing at edges. Bake at 350ºF until browned.
Meringue: Beat egg whites, water and salt until stiff. Add sugar and beat in.
