3 c. black turtle beans
5 c. water, separated
3 tbsp. vegetable oil
2 c. chopped onions
2 cloves garlic, minced
1 tsp. cumin
1 tsp. paprika
1 tsp. coriander
6 c. chicken stock
1 bay leaf
1 c. diced red pepper
1 c. diced green pepper

Directions:
Soak beans overnight in 4 c. water. Top off with 1 c. water and bring to boil. Reduce heat and simmer 30 min.; remove from heat, rinse and strain.
In a 3 qt. saucepan, over low heat, heat vegetable oil, sauteed onions, garlic, cumin, paprika and coriander. When onions are soft, add chicken stock, bay leaf and beans. Cook 20 min., then add peppers. Cook additional 15 min. Serve warm.
