1/4 c Paprika
2 tsp salt
2 tsp onion powder
2 tsp garlic powder
2 tsp dried whole thyme
2 tsp dried whole oregano
1/2 tsp ground red pepper (I use less)
1/4 tsp grouond black pepper
1 lb slab baby back pork ribs
5 hickory wood chunks
cooking spray
Hickory Smoke BBQ Sauce (See recipe in this book)

Combine first 8 ingredients, stir well. Rub mixture evenly on all surfaces of the ribs. Place ribs in a covered container and refrigerate 1-24 hours. Soak wood chunks in water and beer for at least 2 hours. Coat cooking grates with cooking spray. Prepare fire in smoker. Place wood chunks in smoker in pan and then place a pan of water and beer in the smoker. Arrange ribs on cooking grates. Place the Hickory Smoked BBQ sauce in the upper grate of the smoker (see recipe in this book). Cover smoker lid and cook six+ hours or until ribs are tender (225 degrees).

Brush ribs with BBQ sauce during last hour of cooking. Remove sauce and ribs from smoker. Use remaining sauce for dipping.
