3 Medium Zucchini, shredded
3 green onions
1/4 cup flour
1 tablespoon Chile powder
1 teaspoon salt
4 chicken breasts, skinned and boned
3 tablespoons olive oil
salt & pepper to taste
1/4 pound Jack or pepper jack cheese, thinly sliced

Directions:
Directions:
Shred zucchini, with a paper towel get rid of excess water. In a bowl combine zucchini and green onions. Mix flour, Chile and salt together. Heat oil in skillet. coat chicken with flour mixture. Saute for about 3 minutes, transfer to casserole dish.
Spoon zucchini mixture over over breast cover with cheese.

bake at 350 for about 20 minutes
