1 lb. sweet Italian sausage, ground
1 cup white rice
6 cup beef broth
1 can (10-3/4 oz.) chopped tomatoes in puree
1/4 tsp. pepper
1 box (10 oz.) chopped frozen spinach, thawed and drained
Romano cheese, for garnish

Directions:
Directions:
Cook ground sausage in a pot and break the meat up with a fork as it cooks. Add rice, broth, tomatoes and pepper and bring to a simmer. Cook about 15 minutes or until rice is tender. Stir in chopped spinach and let simmer for a few minutes. Ladle into bowls and garnish with Romano cheese.
Makes 4 servings.
