2 cups packed cooked pumpkin ( cut a pumpkin into nice chunky pieces. get rid of seeds & guts by scrapping with a spoon. place on baking sheet @ 350 for an hour. pull outside skin off. then cut into smaller pieces.)
1 cup sugar
1 tbsp flour
1 1/2 tsp cinnamin
1/4 tsp salt
2 beaten eggs
1 cup evaporated milk
1 deep dish pie crust

Directions:

Preheat oven to 425.
Mix all ingredients in a blender untill smooth. Pour into pie crust.
Bake for 15 minutes @ 425 then reduce heat to 350. Bake for an addition 45 minutes. Make sure the filling is set before taking out. You may need to increase the time by 10 minutes.

This pie is delicious. I never really cared for pumpkin pie until my friend gave me this recipe. I know what your thinking to much work. But what else to do with all those pumkins. It's definetly worth it. I make several pies & give them to friends & family. I even freeze the mixture & make it for christmas.
