5 Potatoes, peeled and quartered
Butter & Salt to taste
˝ onion, chopped
Garlic
1 lb lean ground beef
1(8 ounce) tomato sauce
2 cups of vegetables (carrots, peas, corn, tomatoes, green beans)
Pepper to taste
1 – 2 cups shredded cheese (cheddar, Jack or both)
Optional: Paprika

Directions:

Preheat oven to 350 degrees

Boil potatoes, make mashed potatoes

In a large skillet sauté onion until clear but firm. Add ground beef and brown. Drain off fat.
Add tomato sauce and mix well
Add mixed vegetables, salt and pepper.
Cover and let simmer until vegetables have softened.

Place ground beef mixture in casserole dish. Top with mashed potatoes. Top with shredded cheese and paprika.

Baked 30 minutes or until bubbly.
