1 (8 oz.) box Rigatoni
1 medium eggplant, cut into large pieces for grilling
1 zucchini, cut in large pieces for grilling
1 large onion, cut into 1/2-inch slices
2 Tbsp. olive or vegetable oil
3-1/4 cups of spaghetti sauce
Grated Parmesan cheese
Grated Romano cheese

Directions:
Directions:
Cook rigatoni according to directions and drain. Meanwhile, brush eggplant, zucchini and onion with oil. Grill vegetables on grill until crisp-tender. Coarsely chop vegetables when cooked. Heat pasta sauce in pan; stir occasionally. Pour sauce over hot drained rigatoni and top with grilled vegetables. Serve with cheeses sprinkled over top.
